Tasty and juicy tender coconut chicken pairs well with rice, chapathi and roti. Here is the recipe of delicious tender coconut chicken.

Ingredients
2 kg chicken (cut into small pieces)
1 tender coconut (cut the flesh into small pieces)
½ kg shallots
200 gms red chillies
10 - 12 sprigs curry leaves
½ tsp turmeric powder
Salt as required

Preparation
Wash and drain the chicken pieces
Heat coconut oil in an uruli or thick bottomed vessel
Sauté the chopped shallots
Add the red chillies and curry leaves too
Sauté well
Now add the chicken pieces, tender coconut pieces, turmeric powder and salt
Mix well and cook with the lid on
There is no need to add water as the chicken would release stock
After the chicken pieces have cooked well, simmer until the water is reduced
Add chilli powder if required
Tasty ilaneer chicken is ready.
