Amritsari kulcha is a typical Punjabi cuisine made of all purpose flour. It is best tasted with dhaba chutney. Here are there recipes:

Ingredients
4 cup Aashirvaad multi grain atta
1.5 cup Aashirvaad Svasti milk
1 cup water
1 tsp baking powder
2 tbsp oil
2 cup Aashirvaad Svasti ghee
1 tsp sugar
Salt to taste
For stuffing
2 grated potato
1 chopped onion
1 tsbp ginger
1 tsp crushed coriander seeds
1 tsp Anardana seed crushed
1 tsp Aashirvaad coriander powder
1 tbsp coriander leaves (chopped)
1 tsp kasoori methi
Black salt to taste
Salt to taste
1 tsp amchoor powder
2 green chillies

Pyaaz Ka Khatta
Ingredients
0.5 cup tamarind water
Salt to taste
1 small onion, chopped
Black salt to taste
1 tsp red chilli powder

Preparation
For Dough
Keep multi grain atta and add all the ingredients, except ghee, and knead the dough well. Rest for 30 mins.
Flatten the dough and spread the ghee evenly on the dough.
Now layer the dough by folding it three times so as to give 6 layers and rest it for 10 mins
For stuffing
Grate cold potatoes and add all the other ingredients in the potato
Mix well and keep aside
Take potato stuffing and enclose it into the dough
Flatten the stuffed dough
Put kasoori methi and crushed coriander seeds on top
Put in tandoor at 180c and cook till crisp
Layer withbutter and serve hot along with dhaba chutney
Dhaba chutney
Mix all the ingredients together and serve along with kulcha.
