Melt in the mouth idiyappam could be easily made using ripe and sweet banana. Here is the recipe.

Ingredients
2 big bananas
1 cup rice flour
1 cup water
1 tsp ghee
¼ tsp salt
1 ½ cups grated coconut
4 – 6 tbsp jaggery
1 tsp cardamom powder

Preparation
Steam the bananas and then grind them in mixer jar into smooth paste
Add some water if required
Boil the banana paste with 1 cup water, salt and ghee
Add the rice flour, when the banana paste begins to boil
Stir until the mixture thickens up
Turn off the flame and set aside for 10 minutes
After it has cooled down, mix well into dough
Mix jaggery and cardamom powder with grated coconut
Spread 1 tbsp sweet coconut mixture on a plantain leaf
Meanwhile, fill an idiyappam mould with the dough
Press the idiyappam strands onto the coconut mix
Spread some more coconut on top
Cook in steam for 10 more minutes
Enjoy the banana idiyappam with a glass of hot black tea.
