Leftover rice halwa

Halwa is an iconic Indian sweet that is loved by both kids and adults alike. Check out the recipe of melt in the mouth halwa that could be made with leftover rice.

Ingredients
2 cups leftover rice
1 ¾ cups jaggery
1 cup first extract of coconut milk
3 tbsp corn flour
¼ tsp powdered cloves
½ tsp cardamom powder
½ tsp dried ginger powder
½ tsp cumin powder
A pinch of salt
3 tbsp ghee
Nuts to decorate

Preparation
Grind the leftover rice, corn flour and coconut milk into smooth paste
Into it add powdered cloves
Mix well
Prepare jaggery syrup by melting jaggery in ¼ cup water over flame
Strain this syrup into the vessel in which halwa is made
Add 1 tbsp ghee into the jaggery syrup
Add the leftover rice paste too
Mix well
Allow this mixture to boil
Stir continuously until it begins to thicken up
Now add the salt, cardamom powder, dried ginger powder, cumin powder and 1 tbsp ghee
Stir and mix well
Add 1 tbsp ghee when the mixture thickens up nicely and begins to separate from the vessel
Mix well and turn off flame
Grease a vessel with ghee
Transfer the hot halwa into the greased dish
Garnish with chopped nuts
Cut into pieces when the halwa cools downs
Delicious leftover rice halwa is ready.
