Soft and fluffy appam made with rice powder and aval could be enjoyed for breakfast with delicious curries. Here is the recipe.

Ingredients
1 cup rice powder
½ cup grated coconut
½ cup flattened rice
½ tsp yeast
Sugar as required
Salt as required
Lukewarm water as required

Preparation
Wash the flattened rice
Take the rice powder, coconut, flattened rice, yeast, sugar, salt and lukewarm water in a mixer jar
Blend well
Transfer the batter into a bowl
Keep it aside for at least 15 - 20 minutes
Heat a pan and pour a ladle full of batter
Do not spread the batter too much
Make sure that the flame is high
When the batter begins to set and holes appear on it, lower the flame
Cook the appam with the lid on
This appam pairs well with egg curry, vegetable stew or meat curries too.
