Two simple recipes using mango and brinjal

Try these local dishes that could be easily prepared using mangoes and egg plants that are easily available in our backyards.
Ripe mango curry
Ingredients
1 - 2 ripe mangoes
1 tbsp chilli powder (or as per taste)
Salt as required
1 -2 tsp coconut oil
Preparation
Cut the ripe mangoes into small pieces
Into it add chilli powder, salt and coconut oil
Mix well
Ripe mango curry is ready!
Egg plant stir fry
Ingredients
2 egg plants/brinjal
1 onion
2 -3 split green chillies
Salt as required
1 -2 tsp coconut oil
Preparation
Cook the chopped egg plants with onion, green chillies, salt and some water
If you like the dish to be watery, turn off the flame once the veggies are cooked
Or you could reduce the water and roast the egg plants well
Add some curry leaves and fresh coconut oil before taking the dish off the flame.
