The iconic sulaimani or the lemon tea is a spectacular beverage that shares a unique cultural identity with Malabar. Infused with cardamom, cloves, coriander seeds, cinnamon, cumin, dried ginger, mint leaves and lemon, this special sulaimani is simply spectacular. Check out the recipe.

Ingredients
3 gms cardamom
5 gms cinnamon
2 cloves
5 gms pepper corns
5 gms coriander seeds
2 gms cumin seeds
60 gms dried ginger
2 sprigs mint leaves
30 gms tea powder
70 ml lemon juice
300 gms sugar
2 ½ litres water

Preparation
Crush the spices
Boil some water on simmer
Add the crushed spices
Let the water simmer until the spices are nicely infused in it
When the water begins to change colour, add the tea powder and sugar
Mix well
Add the lemon juice and mint leaves
Close the lid and keep aside for 2 minutes
Strain the tea and pour into glasses
Enjoying a glass of hot sulaimani after having biryani is bliss!
