Avial is prepared in different ways in different parts of Kerala. This Palakkad avial is excellent in taste and easy to prepare.

Ingredients
1.5 cup yam
1 carrot
2 drum sticks
1 cup cucumber
10 cluster beans
1/2 cup pumpkin
1 cup snake gourd
6 green chillies
1/2 cup water
½ cup thick yoghurt
1 coconut grated
Salt
Curry leaves
1 tbsp coconut oil

Preparation
Wash and clean the vegetables and cut them lengthwise
Add 4 green chillies, half a cup of water and enough salt, cover and cook on low heat for 10 minutes
When the vegetables are cooked, add yoghurt. If the curd is too sour, just add a quarter cup or according to taste
Cook for another 5 minutes
Care should be taken not to overcook the vegetables
Crush the grated coconut with two green chillies
Add into the avial
Cover and cook until raw smell goes. Add the curry leaves and coconut oil and turn off the heat.
