Ingredients
1 big eggplant
½ cup yoghurt
½ cup tahini paste (roasted white sesame seeds is ground with olive oil to prepare tahini paste)
2 cloves garlic
2 tbsp olive oil
Salt as required

Preparation
Wash the eggplant
Roast the eggplant directly over the flame until all sides are nicely roasted
Remove the skin and cut it into small pieces
Into the roasted eggplant pieces add the garlic, yoghurt, tahini paste and salt as required
Now mash it well using a hand blender until it has a creamy consistency
Drizzle some olive oil on top before serving the dip
Tasty Arabian style Mutabal is ready.
