Beetroot chicken roast

As much as it sounds unique, this dish looks and tastes spectacular too. Try out this special recipe of beetroot chicken roast that can be paired with appam, roti, chapathi or porotta.
Ingredients
500 gms chicken
For the marinade
1 tsp ginger - garlic paste
1 tsp crushed pepper corns
Salt as required
For roasting
1 small onion (thinly sliced)
2 palm full curry leaves
6 green chillies
1 tbsp red chilli flakes
½ tsp garam masala
1 beetroot (grated)
For the sauce
1 tbsp soy sauce
3 tbsp tomato sauce
4 tbsp chilli sauce
Mix all these sauces together
Preparation
Marinate the chicken pieces with ginger - garlic paste, crushed pepper and salt
Keep aside for at least half an hour
Pressure cook the marinated chicken until one whistle; do not add water at all
Meanwhile, heat coconut oil in a pan
Sauté the onions, red chilli flakes, green chillies and curry leaves
Into it add half of the sauce mix
Add the grated beetroot too
Mix well
Cook on low flame
Add the cooked chicken including the broth when the gravy is almost done
Now add the garam masala and the rest of the sauce mix
Taste for seasoning
Stir and cook until the gravy reduces and everything gets nicely roasted
