Chicken vindaloo is an iconic dish of Goa that is prepared during the Christmas season. The same vindaloo masala could be used to cook delicious pork and beef dishes too. Check out the pretty simple recipe of chicken vindaloo.

 

Ingredients

5 Kashmiri chillies (soaked for 10 minutes)
1 tsp coriander seeds
1 tsp peppercorns
¼ tsp mustard seeds
¼ tsp fenugreek seeds
½ tsp cumin
1 piece cinnamon
5 cloves
2 cardamom pods
6 garlic cloves
1-inch piece of ginger
2 tbsp vinegar
500 gms boneless chicken
2 tbsp oil
2 onions
1 small tomato
1 green chilli
1 tsp sugar
Salt as required
Preparation
Dry roast the coriander seeds, mustard seeds, fenugreek, cumin, cinnamon, cloves and cardamom
Keep them aside
Grind the soaked Kashmiri chillies, dry roasted spices, garlic, ginger and vinegar in mixer jar
Marinate the boneless chicken with this masala paste and salt as required
Keep the marinated chicken aside for at least 4 hours
Heat oil and sauté the onions
Now add the tomato and green chilli
Sauté well
Into it add the marinated chicken
Mix well and cook for 10 minutes
Now add half cup water and salt as required
You could add a teaspoon of sugar
Give everything a good mix
Cook on low flame for 15 minutes
Chicken vindaloo tastes fabulous when enjoyed on the next day.
