Dosas are one of the most sought after Indian breakfast dishes in the world. From the regular dosa to special dosas with variety of fillings, they are available in myriad forms. The classic masala dosa, with its crispy edges and delicious potato-based filling is an all time favourite. Ingredients
½ beetroot
1 tsp chilli powder
Salt as required
1 cup dosa batter
3 potatoes (boiled)
3 green chillies
Ginger (finely chopped)
1 onion

Preparation
Cook the beetroot and mash them well into smooth paste
Boil the potatoes with onion, green chillies, ginger and salt
Prepare a basic mustard tempering by roasting dried chillies and curry leaves
All the tempering into the potato mixture
Mix well
Heat a dosa pan and rub some oil
Pour a ladle full of dosa batter and spread into thin dosa
After a minute, spread the beetroot paste
Place the potato masala in the center
Sprinkle some chopped coriander leaves as well
Fold and take it off the flame
Enjoy Kancheepuram masala dosa with chutney and sambar.
