'Masala pulao' is an extremely fragrant dish that tastes amazing as well. It is loaded with veggies and has a healthy dollop of fresh ghee. Try out this recipe for masala pulao for a veggie treat.

Ingredients
1 cup basmati rice (cooked)
1 tbsp ghee
3 cardamom pods
2-3 cinnamon sticks
4 cloves
½ bay leaf
½ tsp cumin
¼ tsp fennel
1½ tsp chilli powder
1½ tsp coriander powder
¼ tsp turmeric powder
1¼ tsp salt
1 onion
1 tomato
1 potato
1 carrot
2 green chillies
½ cup green peas
1 tsp ginger (crushed)
1 tsp garlic (crushed)
Coriander leaves as required
¼ cup water

Preparation
Heat ghee in a pan and sauté cardamom, cinnamon, cloves, bay leaf, cumin and fennel
Into it add ginger and garlic
Sauté well
Add the green chillies as well
Now add the onions
Sauté until they are nice and golden
Add in the potato, cooked green peas, carrot and tomato
Sauté until the vegetables are soft
Now add the chilli powder, coriander powder, turmeric powder and salt
Mix well
Cook for 5 minutes with the lid on
Finally add the cooked basmati rice and chopped coriander leaves
Give everything a good mix
Enjoy with curries or chutney.
