Payasam is undoubtedly one of the most favourite deserts of Kerala. This tender coconut payasam is sweet, thick and healthy as well. Try this recipe which is full of texture and flavour.

Ingredients
1 litre milk
200 gm sugar
½ cup tender coconut flesh
¼ cup tender coconut water
1 cup coconut milk
½ cup tender coconut

Preparation
Boil the milk with sugar in it
Stir occasionally until the milk gets thickened
Grind half cup tender coconut flesh in tender coconut water
When the milk begins to change colour, take it off the flame
After the milk has cooled down, add the tender coconut paste
Now add the coconut milk and mix
Finally add fresh pieces of tender coconut on top
You could sprinkle some cardamom powder if required.

Notes
You could add condensed milk in this payasam. The coconut pieces should be tender and smooth. Instead of milk, you could cook this dessert in coconut milk as well. Add dry fruits roasted in ghee if necessary.
