Rava-jaggery laddu is an incredibly easy dish to prepare. The perfect combination of roasted semolina and sweet jaggery adds texture and taste to the dish which could be served as an evening snack.
Ingredients
¾ cup roasted semolina
¼ cup gram flour
170 gm jaggery (shaved)
¾ tbsp cardamom powder
¾ cup grated coconut
¾ cup milk / coconut milk
2 tbsp ghee
Crushed cashews as required
Preparation
Heat ghee in a pan and add semolina
Mix well
Into it add gram flour and keep stirring until they are roasted
When they are almost done, add the grated coconut and crushed cashews
Roast everything well on a low flame
When the moisture from the coconut is lost, add in the jaggery and cardamom powder
Mix well on low flame
Pour the milk / coconut milk into it
Turn the heat up and allow it to boil well
When it begins to bubble up, lower the flame and cook for 10 minutes with the lid on
Keep stirring until the liquid is reduced well
Add a table spoon full of ghee and mix everything well together
The mixture should have the right consistency to make small balls of laddu from it
Those who don€™t like ghee can use coconut oil instead.
