Ripe bananas stuffed with the eggs, cashew nuts and raisins and roasted in rich ghee. Enough said? It's more delicious than you can imagine!

Ingredients
500gm ripe plantains
Oil, for frying
3 eggs
2 tbsp sugar
1 tsp ghee
4 cashew nuts, crushed
10 raisins cut in half
2 cardamom pods, powdered

Preparation
Skin the plantains and snip off both ends
Slice into two and make three deep horizontal grooves on each piece
Heat enough oil in a pan and fry the banana pieces till they turn golden brown. Keep aside
Mix one tbsp sugar with eggs
Heat ghee in a pan and stir fry the egg mix
Now add the cashew nuts, raisins, cardamom powder and the remaining one tbsp sugar and stir well
Stuff the grooves with the mix (Eggs can be substituted with a cooked mixture of grated coconut and sugar)
Serve hot
