Vegetable kurma without coconut milk

Delicious and creamy vegetable kurma tastes amazing with chapathi, roti or naan. This special recipe doesn't require coconut milk or even a pressure cooker. Check out the pretty simple recipe of vegetable kurma.

Ingredients
1 tsp white sesame seeds
1 tsp ghee
2 tbsp oil
2 cardamom pods
2 cinnamon sticks
½ tbsp fennel seeds
Curry leaves
1 onion (chopped)
1 tbsp ginger-garlic paste
1 tomato
½ tbsp chilli powder
½ tsp turmeric powder
1 tsp salt
¼ tbsp garam masala
2 potatoes
5 beans
1 carrot
¼ cup green peas
Coriander leaves as required
¾ tsp sugar
5 cashews
½ cup coconut

Preparation
Soak the white sesame seeds for 20 minutes in 3 tbsp water
Heat ghee and oil in a pan
Add the cardamom pods, cinnamon, fennel seeds, curry leaves, onion and ginger €“ garlic paste
Sauté for a minute
Add the tomatoes and sauté well
Into it add the chili powder, turmeric powder, salt, garam masala, potato, beans, carrot and green peas
Grind the soaked cashew paste, white sesame seeds and grated coconut into smooth paste
Add this paste into the sautéed vegetables
Cook on simmer for 5 minutes with the lid on
Add 1 glass cow€™s milk and sugar
Cook for 3 more minutes
Tastes best when served hot.
