500 grams mutton liver, sliced into 1-inch pieces
½ cup water
1 tsp turmeric powder
Salt to taste
1 cinnamon stick
5 cloves
5 cardamom pods
1 tsp aniseed
½ tsp turmeric powder
½ tbsp chilli powder
2 tsp freshly ground pepper powder
1 tbsp coriander powder
A little water (to make a paste)
½ cup oil
2 medium-sized onions, sliced
2 green chillies, slit
1-inch piece of ginger, sliced
1 cup thick coconut milk

Preparation
Combine the mutton liver, water, turmeric powder, and salt in a pressure cooker
Cook for 3 whistles and set aside
Grind cinnamon, cloves, cardamom, and aniseed into a fine powder
Mix the powdered spices with turmeric powder, chilli powder, pepper powder, and coriander powder
Add a little water to form a smooth paste
Heat oil in a pan and sauté the sliced onions, green chillies, and ginger until golden brown
Stir in the prepared masala paste, cooking until the oil begins to separate from the mixture
Add the pressure-cooked liver slices to the pan, mixing well with the masala
Pour in the thick coconut milk and cook until most of the liquid is absorbed, leaving a rich, flavourful coating
Serve mutton liver ularthu hot with steamed rice, appams, or chapatis. Its bold flavours and creamy texture make it a standout dish for special occasions or everyday meals!
