The search for Kerala's soul food begins with the delicious payasams and pradhamans. The ada pradhaman is a sweet treat of coconut milk, jaggery and rice ada.

Ingredients
200gm readymade ada
2 cups first milk of coconut
2 cups second milk of coconut
400gm jaggery, melted
1 cup ghee
4 dsp cashew nuts
1/4 tsp powdered cardamom
4 dsp raisins
Water as needed

Preparation
Cook the ada in required quantity of water in a closed container
Filter the cooked ada
Put the filtered ada into a pre-heated wok
Pour melted jaggery into the wok and mix gently
When the mixture starts boiling, add melted ghee and add second milk of coconut
In another container, mix powdered cardamom with first milk of coconut
When the ada mixture thickens, add the first milk of coconut in which cardamom has been dissolved
Take off the flame when ada has thickened
In another container, fry cashewnuts and raisins and then add to the ada
Serve hot
