The hot and humid season is here again and it is time to chill down your body with some uber'cool' dinner before bed. Non-vegetarian dishes are a no-go since they have a heating effect on your body. Don't worry, this delicious and healthy baby corn salad could help you bring the heat down yet make you feel full on a summer night.
Ingredients
1 cup thinly sliced baby corn
1/2 cup sliced beans
1 cup roasted peanuts
1/2 cup chopped tomatoes
1/2 tsp chili powder
1 tsp garlic cloves
1 tbsp sugar
3 tbsp lime juice
Salt, as required
Preparation
Add baby corn and beans to boiling water
Drain off the hot water immediately and run cold water over it
Be careful not to keep the goodies in boiling water for too long or your salad will turn soggy
Add peanuts and tomatoes to it
Mix chili powder, garlic, salt, and sugar with lime juice
Add this mixture to the salad
Toss and stir the salad to mix it well
Chill it down in the refrigerator
Place lettuce leaves on a serving plate and spread the salad over it
Season the salad and serve
