After the hullabaloo that Maggi instant noodles created, the next food item that could easily feature on the ‘most wanted’ list is the Broasted Chicken. But the allure of this is such that there is no denying that Malayalis, young and old alike, can’t seem to get enough of its tantalizing crunchiness. There are new brands of fried chicken sprouting up in every nook and corner. Along with the confusion of which one to eat, there is also a danger siren that we choose to ignore. Broasted Chicken features among the top choices of your child as well, and saying no to it is going to be rather tough. This is a recipe that we can easily replicate at home. And that too, the healthier version. Take 10 fairly big pieces of chicken and get the marinade ready. Add 2 cups of buttermilk and water, ½ tbsp. ginger paste, ½ tbsp garlic paste, 1 tsp pepper powder, salt as required and 1 tbsp chilli flakes. You can also add a pinch of your choice of dried herbs like oregano, rosemary or parsley. Marinate the chicken pieces with this mix and keep in the fridge for 4 to 6 hours. The time has to be adhered to for the flavours to set in well. Next, make the coating required to fry the chicken— Take 1½ cups maida, ½ cup corn flour, ½ cup corn flakes, a pinch of baking powder, salt to taste, 1 tsp chilli powder, ½ tsp pepper, ½ tsp crushed garlic, ½ tsp crushed onions. Mix all these ingredients well and keep aside. The next step is the egg mixture that binds the chicken for frying. Take 1 egg, 1 tsp chilli sauce, salt for taste, ½ cup milk. Beat these well in a mixer. Take the chicken from the fridge and dry well with a towel to remove any trace of water. The oil should be bubbling hot for frying. A high fire can lead to the chicken not getting cooked properly. Dip the chicken in the egg mixture and then coat it with the dry flour mix. Repeat the step again and give the chicken 2 even coats of crust. The chicken is now ready to fry. Make sure the pan is not crowded with the chicken pieces. Fry one side on a low fire for 15 minutes. Turn over to cook the other side. Remove from the fire once it is golden brown in colour. Homemade Broasted chicken is ready to be relished!
