Many fret about the left over rice that is often found in Indian kitchens. Here's an easy recipe of tasty and crispy vada that can be prepared using the left over rice in under five minutes.

Ingredients
2 cups rice
4 tbsp rice flour
Small piece ginger
2 green chillies (finely chopped)
1 onion (finely chopped)
½ tsp black pepper powder
Salt as required

Preparation
Grind the boiled rice without adding water. It should have a coarse and not paste-like consistency
Into it add the rice flour, ginger, green chillies, onions, pepper, and salt as required and mix well
Heat oil in a deep pan
Rub water on your palms and scoop out small balls of dough. Press the dough gently into the shape of vada with a hole in the middle
Fry these in the hot oil until golden and crispy
Make sure that the vada is cooked through and the insides are soft and fluffy
Serve hot with coconut or fresh coriander chutney.
