Kerala-style ramen recipe

This Kerala-style ramen (ramyun) combines the traditional flavors of Kerala with the convenience of instant noodles, making it a unique and delicious twist on a popular dish. Enjoy this comforting bowl of ramen as a quick and tasty meal!

Ingredients
2 packets of instant ramen noodles
1 tbsp coconut oil
1 small onion, finely chopped
1 tomato, finely chopped
1 small piece ginger, minced
2 cloves garlic, minced
1 green chilli, slit
1/2 tsp mustard seeds
1/2 tsp turmeric powder
1 tsp garam masala
1/2 tsp red chilli powder
1 cup mixed vegetables (carrots, peas, beans, etc.)
1/2 cup coconut milk
1 cup water (adjust as needed)
Salt to taste
Fresh coriander leaves for garnish

Preparation
Heat coconut oil in a large pan or wok
Add mustard seeds and let them splutter
Add the chopped onion, minced ginger, garlic, and green chilli
Saute until the onions turn translucent
Add the chopped tomato and cook until it becomes soft and mushy
Stir in turmeric powder, garam masala, and red chilli powder
Saute for a couple of minutes until the spices are well blended
Add the mixed vegetables and saute for a few minutes until they start to soften
Add the instant ramen noodles, the included seasoning packets, and water
Stir well to combine
Bring to a boil, then reduce the heat and let it simmer until the noodles are cooked and the soup thickens to your desired consistency
Add coconut milk to it and turn off the stove right before it comes to a boil
Adjust the salt to taste
Garnish with fresh coriander leaves
Serve hot.
