Attappady's Vanasundari chicken, a green, herby dish prepared with masala made of pudina leaves, green pepper, palak, bird's eye chillies and more is a star item at many Kudumbashree food festivals in Kerala. It's not just its unique taste that attracts foodies, but also its health aspects. It's often said that the preparation is a good meal for those who suffer from bad cholesterol, blood pressure, diabetes and more. Here's how you prepare the green beauty:

Ingredients
1 handful of pudina
1 handful of coriander leaves
1 handful of palak leaves
1 tsp pepper
1 kg chicken
1 lemon
Salt
1 tbsp Garlic paste
½ tsp turmeric

Preparation
Grind pudina, coriander, palak leaves and pepper to make a masala
Into that add lemon juice and salt
Keep the masala closed with a lid for three hours
After that, boil enough water to cook the chicken
Into the water, add ginger paste, garlic paste and turmeric
Once it boils, add chicken to it putting small cuts on it
Boil for five minutes
Take the chicken out, apply the previously made masala on it
Spread the chicken on a heavy-bottomed skillet and shred it with a knife or spoon
Keep adding a bit of masala and chilly sauce to the chicken while shredding
Enjoy with dosa or appam
