Mutton liver roast: A nutritious and delicious traditional Kerala curry

It's often said that mutton liver is an extremely nutritious food, and if a healthy adult eats a suitable serving regularly, it can help reduce nutrient deficiency to a large extent. It also contains vitamins A, B, copper, iron and more and curries made out of it are considered delicacies that suit any occasion. Here's the recipe for a delicious mutton liver roast, a traditional Kerala preparation.

Ingredients
350 gms mutton liver
100 ml coconut oil
5 gms ginger
5 gms garlic
50 gms sliced onion
2 gms curry leaves
3 gms green chilly slices
20 gms chopped tomatoes
Salt to taste
2 gms turmeric powder
4 gms Kashmiri chilly powder
5 gms garam masala
3 gms fennel powder
5 gms coriander powder
5 gms black pepper powder

Preparations
Heat oil in a pan
Add ginger, garlic, green chilly, curry leaves, onion and salt
Sauté until it turns brown
Add all the seasonings and tomatoes
Sauté in slow heat until tomatoes get mashed
Add mutton liver cubes
Cover and cook in slow heat for 8 to 10 minutes
Remove the lid and cook it for 2 minutes on high flame until the gravy gets thick
