Black Rice Pudding is a traditional Thai dessert made with black glutinous rice, which is rich in fibre and antioxidants. Compared to white rice puddings, it is healthier. In parts of Southeast Asia, it is also served as a breakfast dish. When combined with coconut cream, this dish will take you to guilt-free dessert heaven.

Ingredients
Black rice - 80 gm
Palm sugar - 30 gm
White sugar - 20 gm
Salt - 3 gm
Pandan leaves - 1 each
Taro -10 gm
Water chestnut - 10 gm
Fresh sweet corn - 10 gm
Coconut sauce - 30 ml
Ripe jackfruit arils for garnish
Preparation
1. Soak the black rice in normal water for 1 hour
2. Boil the rice along with water chestnut for 30 minutes
3. Add palm sugar, white sugar and pandan leaves to the rice
4. Allow it to cook
5. Garnish with sweet corn, taro and jackfruit
6. Top it with coconut sauce and serve
