This protein-rich 'omelette' is prepared using moong dal and lots of veggies. You could add any veggies of your choice. This is a filling dish that could be enjoyed as a pre-workout meal. Here is the pretty simple recipe of moonglet which is loaded with protein and other essential nutrients.

Ingredients
1 cup moong dal
2 tbsp urad dal
¼ tsp asafoetida
Salt as required
Beetroot
Ginger slices
Coriander leaves
Sweet corn
Bell pepper
Onions
Baking soda
Butter/ghee

Preparation
Soak the moong dal and urad dal for at least 4 hours
Grind these by adding a bit of water in a mixer jar
Add asafoetida and salt
Mix well
Whisk this mixture for at least 4 minutes
The batter would be soft and loose
Transfer 3 ladle full of this batter into another bowl
Into it add onion, bell pepper, sweet corn and a pinch of baking soda
Mix well
Grease a pan with butter/ghee
Pour the batter mixed with veggies
Place beetroot, ginger and coriander leaves on top
Flip and cook until both the sides are cooked well
Enjoy the moonglet with coriander chutney or tomato ketchup.
