Also known as Kannurappam, this tasty dish is enjoyed as a tea-time snack in Northern Kerala. Here is the recipe.

Ingredients
1 cup raw rice
1 tbsp boiled rice
2 tbsp all-purpose flour
5 – 6 tbsp sugar
A pinch of salt
4 crushed cardamoms
Oil as required

Preparation
Soak the raw rice for at least 4 -5 hours
Wash and drain
Take the soaked raw rice, boiled rice and some water in a mixer jar
Blend into a coarse paste
Now add sugar and all purpose flour
Blend into fine batter
Transfer the batter into a vessel
Keep it aside for 8 – 9 hours
Add baking soda, salt and crushed cardamoms
Mix well
Heat oil in a unniyappam vessel
Pour a spoon of batter in each hole
Flip the pancharappam when one side rises
Cook until the lower side is brown in colour.
