Knafeh or kunafa is a popular Arabic dessert that easily melts in mouth. Here is the recipe of homemade knafeh that could be easily prepared in a pan.
Ingredients
¾ cup sugar
¾ cup water
1 tsp lemon juice
1 cup milk
3 tbsp sugar
100 gms cream cheese
¼ cup water
3 tsp corn flour
2 tsp all purpose flour
250 gms knafeh dough
5 tbsp un melted salted butter
2 tbsp melted unsalted butter
50 gms mozzarella cheese
A pinch of saffron
Pistachios
Preparation
Prepare a classic sherbet by mixing equal amount of sugar and water (3/4 cups)
Boil the sugar syrup for 1 minute on low flame; add 1 tsp lemon juice
Mix well and turn off the flame
To prepare the cream mix, heat a pan on low flame
Add the milk, sugar and cream cheese
Mix well
Meanwhile, mix ¼ cup water, corn flour and all purpose flour
Add the corn slurry into the cream cheese mixture
Mix until it turns thick
Turn off the flame
Set this cream mixture aside to be used later
Cut the knafeh dough (you could also use vermicelli) into pieces
Add the melted butter slowly and mix well
Add 1 tbsp butter in a non stick pan
Lower the flame and add half of the knafeh dough
Now spread the cream cheese mixture
Leave 1 centimetre gap on the edges as the melted cheese would ooze out
Add the mozzarella cheese
Add the rest of the knafeh dough on top
Raise the edges using a spoon
Close the lid and cook for 5 minutes on low flame
After 5 minutes, add 1 tsp butter in the same pan
Flip the knafeh
Cook for 5 more minutes on medium flame
Transfer the knafeh into the serving dish
Garnish with crumbled pistachios
Sprinkle the sugar sherbet
Cut the knafeh into small pieces and enjoy.
