Tasty and fragrant carrot rice could be eaten with or without curries. Here is how to make it at home.
Ingredients
2 carrots
1 onion
2 green chillies
1 tbsp ginger - garlic paste
1 tsp garam masala
1 bay leaf
4 cloves
4 -5 cinnamon sticks
6 cardamom pods
2 cups basmati rice
1 -2 tbsp ghee
2 -3 tbsp sunflower oil
Salt as required
Coriander leaves
Preparation
Boil the rice with some salt and 1 tbsp sunflower oil
Take it off the flame when the rice is almost done
Heat 1 tbsp ghee in a pan
Fry some onions and cashews
Set it aside to be used later
Add 1 tbsp sunflower oil into the same pan
Roast the bay leaf, cloves, cinnamon and cardamom
Now add the onions and green chillies
Sauté well
Add ginger - garlic paste and sauté until the raw smell is gone
Into it add finely chopped carrots, salt and garam masala too
Sauté for 2 minutes on medium flame
Lower the flame and add the basmati rice
Mix well
Turn off the flame
Garnish with chopped coriander leaves and fried onions and cashews
Close the lid and keep aside for 5 minutes
Serve the carrot rice while it is hot.
