Ingredients
For the marinade
1 kg pork
1 tsp chilli powder
1 tsp garam masala
1 tsp pepper powder
½ tsp turmeric powder
1 tbsp coriander powder
1 tbsp ginger – garlic paste
Curry leaves as required
¼ cup chopped onion
3 -4 green chillies (split) Salt as required
To sauté
1 cup shallots (chopped)
1 tbsp chopped green chillies
1 tbsp ginger – garlic paste
Curry leaves as required
1 tbsp pepper powder

Preparation
Wash the pork bits
Marinate the pork bits with chilli powder, garam masala, pepper powder, turmeric powder, coriander powder, and ginger-garlic paste, curry leaves, onions, green chillies and salt
Keep aside for at least an hour
Put the marinated pork in a thick bottomed pan
Cook on high flame
Lower the flame when the meat begins to release the fat
Transfer the fat from the pan into another vessel or pan
Into this pork fat add the shallots, green chillies, and ginger-garlic paste, curry leaves and pepper powder
Sauté well
Now add the cooked pork bits
Give everything a good mix
Roast until the pork bits are dry and become flavoursome
Tasty pork roast is ready.
