Ingredients
2 kg palayankodan bananas
1 ½ kg jaggery
5 tbsp ghee
Cardamom powder
Dried ginger powder
Cumin powder
2 cups rice flour
1 cup grated coconut
Preparation
Cut the bananas into small pieces
Blend them well in a mixer jar
Heat a pan and pour in the blended banana
Stir well
When the banana begins to heat up, add the jaggery shavings
Mix well
Add ghee occasionally
Keep stirring
When the banana - jaggery mix begins to separate from the pan, add the cardamom powder, dried ginger powder and cumin powder
Stir and mix well
This sweet gooey mixture could be stored in the fridge
Whenever you require, take it out of the fridge and heat it up before cooking any dishes with it
To make the ada, mix the rice flour and grated coconut into the banana - jaggery mix
Place 1 ½ tbsp of this mix in a bay leaf or a piece of plantain leaf
Fold into triangles
Steam for at least 20 minutes in a regular steamer
Enjoy the delicious pazham ada with hot tea or coffee.
