If you haven’t begun making wine for Christmas yet, here is a very simple recipe of an instant wine made with palayankodan banana. Interestingly, this wine would be ready in just 10 days.

Ingredients
1 kg palayankodan/robusta banana
750 gms sugar
1 tsp instant yeast
4 cinnamon sticks
4 cloves
4 cardamom pods
4 Kashmiri chillies
1 ¼ litre boiled and cooled water

Preparation
Cut the bananas into small pieces
Fill an earthen jar with banana pieces and sugar in alternate layers
Pour the boiled and cooled water into it
Add the crushed cloves, cinnamon and cardamom
Add the finely chopped Kashmiri chillies as well
Secure the mouth of the jar tightly and keep it aside
Stir the wine using a wooden spoon on the same time of the day for 10 days
On the tenth day, pass the wine through a sieve or a piece of muslin cloth
Store the banana wine in glass bottles.
