The railway mutton curry is as old as the British Raj in India. It is a special dish that took life in the pre-independence era and was served only in the first-class compartments of the trains. So, this dish is also known as the first-class railway mutton curry. The people of the Anglo Indian community still cook this curry with regional variations.
The railway mutton curry was first served in the first-class compartment of the Golden Temple Mail. Indian culinary experts had added a few more ingredients to the original recipe to give the dish its current flavour and aroma. Ingredients
½ kg mutton
6 dried chillies
3 cloves
1 tsp cumin powder
1 big onion
2 tsp ginger-garlic paste
1 tomato
1 big potato
2 cardamom pods
6 peppercorns
¼ tsp turmeric powder
1 small piece cinnamon
2 tsp chilli powder
2 tsp coriander powder
3 tbsp oil
2 tbsp tamarind water
¼ cup of coconut milk
Preparation
Pressure cook the mutton pieces with turmeric powder and water as required
Meanwhile, heat oil in a pan and sauté onions
Add cinnamon, cloves, cardamom pods, peppercorns and dried chillies
Roast them well
Now add the ginger-garlic paste and sauté until the raw smell is gone
After that, sauté the tomato as well
Make a paste by mixing water in chilli powder, coriander powder and cumin powder
Add this into the sautéed onion mix
Allow them to cook well until the raw smell of the powders is gone
Into it add the cooked mutton including the broth
Cook for 5 minutes with the lid on
Finally add boiled potatoes, tamarind water and salt as required
Cook for 2 more minutes with the lid
Lower the flame and pour in the coconut milk
Give everything a good mix
