Munthirikothu is a local Kerala snack that is extremely tasty, filling, and nutritious. It could be stored up to two weeks if kept in air-tight containers. Check out the recipe of munthirikothu.
Ingredients
1 cup green grams
½ grated coconut
10 cardamom pods
250 gm jaggery
½ tsp dried ginger powder
½ cup rice flour
½ cup rice flour
¼ cup all purpose flour
¼ tsp turmeric powder
Salt as required
Oil to fry
Preparation
Wash the green grams well and drain them
Dry roast the green gram on low flame until they turn brown in colour
Stir continuously while roasting the green gram
When they begin to change colour, add the cardamom
Turn off the flame when the grams are light brown
Keep them aside to be used later
Into the same pan, add the grated coconut
Dry roast until the coconut turns brown in colour
Grind the roasted green gram after it has cooled down. It shouldn't be fine powder
Add the roasted coconut and grind again
Make jaggery syrup by boiling jaggery with water
Add dried ginger powder into it
Turn off the flame when the jaggery has 'one string' consistency
Into it add the green gram-coconut powder
Keep mixing
The mixture begins to thicken up as it cools
Make small balls when it is slightly warm
Prepare a smooth batter by mixing all purpose flour, rice flour, turmeric powder, salt and some water
Dip the green gram balls in this batter and deep fry in hot oil
Store the munthirikothu in air tight containers after they have cooled down completely.
