Ingredients
2 cups oats
4-6 tbsp rice flour
½ cup + 3 tbsp lukewarm water
½ tsp + 2 pinches salt
2 tbsp sesame oil
3 tbsp grated coconut

Preparation
Grind the oats into fine powder. Make sure there are no lumps
Add 4-6 tbsp rice flour into it
Transfer these into a bowl 
Now add salt, sesame oil and lukewarm water
Mix into idiyappam dough
Do not pour hot or cold water to mix the dough
The lukewarm water should be added slowly. If the water is poured in one go, the dough may turn very sticky
Even though the dough may stick onto your palms, it would turn softer as you mix
Keep the dough aside for at least 2 minutes
However, do not rest it for too long as the oats may absorb water and turn hard
Boil water in a steamer
Grease the idli vessel with some oil
Fill the sevanazhi (mould) with the dough
Press the dough into the holes in the idli vessel
Sprinkle some grated coconut on top
Steam for 7 minutes on high flame
Enjoy the oats idiyappam with delicious curries.
