Ingredients
1 cup red spinach (washed and finely chopped)
1 small potato (boiled and mashed)
1 tbsp butter
1 onion (finely chopped)
1 cup croutons
Pepper powder as required
1 tbsp fresh cream
Preparation
Cook the spinach in half cup water
Blend the cooked spinach in a mixer jar
Heat butter in a pan
Sauté the onions
Add the spinach paste, mashed potato, pepper powder and salt as required
Boil the soup
Serve hot with croutons and a dollop of fresh cream.
