Carrots are in season and the wayside vegetable stalls are lined with crates full of ripe and sweet carrots. Around 3 kilos of fresh carrots can be purchased for just Rs 50.

Apart from making the regular carrot thoran (stir fry) or adding it in avial or sambar, delicious halwa can be easily made using carrots. Check out this very simple recipe for carrot halwa that looks and tastes amazing.

Ingredients
6 big carrots
4 cups full fat milk
4 tbsp ghee
½ cup condensed milk
4 tbsp sugar
3-4 cardamoms (powdered)
20-25 cashews
Palm full of raisins
5-6 almonds (peeled and slivered)

Preparation
Wash, peel and grate the carrots
Mix milk and grated carrot in a vessel
Boil this mixture on low or medium flame
Stir occasionally until the milk reduces 
In a bowl mix ghee, condensed milk and sugar 
Now add this into the carrot mix when the milk begins to get reduced
Stir continuously; set the flame on low
Add the cashews and raisins after the milk reduces completely and the carrot becomes sticky
Mix well and cook for some more time
The halwa would have the right consistency when the carrot mix gets dried and non sticky
Scrape off the carrot bits on the sides of the vessel and mix them into the halwa
Garnish with almond slivers
