The refreshing fragrance of the fresh mint, basmati rice and the spices is what makes the delicious mint rice stand out. This tasty rice dish tastes amazing with vegetable curries or meat dishes like chicken or beef. Besides, it is lighter on the stomach and is healthy as well. Ingredients
1 cup basmati rice
1 cup mint leaves
½ cup coriander leaves
1 cup grated coconut
7 green chillies
1 tsp chopped ginger
1 tsp chopped garlic
1 tbsp lemon juice
Salt as required
3 tbsp oil
2 bay leaves
1 piece cinnamon
3 cloves
3 cardamom pods
1 onion (sliced)
3 green chillies (thinly chopped)
Salt as required
2 tbsp cashews (fried)
1 tbsp mint leaves
2 papads (cut into strips and fried)

Preparation
Wash the basmati rice and cook in 2 ½ cups water.
Allow the water to reduce before spreading the cooked rice in a flat bottomed vessel.
Prepare the mint chutney by grinding mint leaves, coriander leaves, grated coconut, green chillies, ginger, garlic, lemon juice and salt into fine paste
Heat oil in a pan and sauté the bay leaves, cinnamon, cloves and cardamom
Now sauté the onions and green chillies
Add the mint chutney when the onions turn brown in colour
Sauté well until everything turn fragrant
Add the cooked rice with some salt
Mix everything well without the rice getting too sticky
When the rice gets mixed with the mint chutney nicely, take it off the flame
Transfer the mint rice into the serving dish
Garnish with fried cashews, mint leaves and fried papad strips.
