'Kozhukkata' or steamed rice dumplings are a traditional Kerala snack that usually has sweet coconut and jaggery filling. This steamed snack is considered a nutritious replacement for junk food or bakery items.

Ingredients
1 cup rice flour
1 cup green gram
1 cup crushed jaggery
2 tsp grated coconut
¼ tsp cardamom powder
2 tsp coconut oil
¼ tsp salt
Hot water as required
Preparation
Wash the green gram and cook it in a pressure cooker
Prepare the jaggery syrup by boiling it in half cup water
When the jaggery syrup begins to boil rapidly, add the cooked green gram , coconut and cardamom powder
Mix well
Make small balls from this mixture
Prepare the dough by mixing rice flour, salt and oil in hot water
Scoop out some dough and flatten it in your palm
Place the green gram ball in the middle and cover it in the shape of a dumpling
Cook in steam.
