Plantain blossom is a very healthy food one can use in making any curry of your choice. Here is the recipe of tasty and healthy plantain blossom and yam vada kootu curry.
Ingredients
1 cup yam (cut into small pieces)
1 tbsp rice flour
2 green chillies
½ cup banana blossom (chopped)
5 shallots (chopped)
½ tsp ginger
½ tsp curry leaves
1 star anise
1 piece cinnamon
4 cloves
4 tipali
½ tsp black pepper
2 pinches nutmeg powder
½ tsp garam masala
Turmeric powder as required€™
Salt as required
2 cups thick coconut milk made from Maggi coconut powder
2 sweet potatoes
Preparation
Heat a table spoon coconut oil in a pan and sauté the banana blossom and shallots
Add turmeric powder and salt as required
Turn off the flame when the water evaporates from the banana blossom and is cooked well
Grind the yam pieces along with green chillies into fine paste
Add the cooked banana blossom, rice flour, chopped curry leaves and ginger, a pinch of cumin and salt as required into the yam paste
Mix everything well together
Prepare small vada from this mixture and keep them aside
Sauté the sweet potato pieces in a table spoon of coconut oil
Into it add 2 turmeric leaves, water and salt as required
Cook well
Take out the turmeric leaf and add 1 cup Maggi coconut milk
Grind the star anise, cinnamon, cloves, tipali, black pepper corns, nutmeg powder, turmeric powder and salt
Add this powder and garam masala into the sweet potato mix
When this has cooked well and begins to thicken up, add the rest of the Maggi coconut milk
Now add the yam-banana blossom vadas and cook for 5 more minutes
Finish off by mixing in the mustard-dried chillies tempering.
