Tasty kudukkachi biryani in earthen pot

Foodies have been drooling over the kudukkachi biryani ever since singer Sayanora Philip came out with her super hit song 'Benki Benki Boom'. Biryani experts say that it is something similar to the matka biryani which is cooked in tiny earthen pots in Kannur. Here is the pretty easy recipe of pot biryani which has a distinct flavour and aroma.
Ingredients
2 glass basmati rice
250 gms chicken
2 onions
1 tomato
1 tbsp ginger-garlic paste
1 tbsp green chillies (crushed)
¼ tsp turmeric powder
1 tsp garam masala
Yogurt
Salt as required
2 tbsp ghee
2 tbsp coconut oil
1 lemon
Coriander leaves
Mint leaves
5 almonds (soaked in water and ground into paste)
A pinch of saffron
Cinnamon, cardamom and cloves
Preparation
Marinate the chicken pieces with ginger-garlic paste, crushed green chillies, turmeric powder, garam masala, yogurt and salt as required.
Keep it aside for at least an hour.
Boil water with cinnamon, cardamom, and cloves and cook the basmati rice in it.
Add a teaspoon of oil to prevent the rice from sticking each other.
Drain the water after the rice is cooked well.
To prepare the masala, heat 1 teaspoon coconut oil and some ghee in a small earthen pot.
Into it, add the onions and sauté. Add tomatoes and mix well.
Now add the marinated chicken pieces and cook for 5 minutes.
Add the coriander and mint leaves.
Add the rice on top of this masala.
Add some coriander and mint leaves and almond paste on top of the rice.
Mix the saffron in milk and sprinkle over it.
Add some more rice on the top and repeat the layers.
Cover the earthen pot using a plantain leaf and then an aluminum foil as well.
Cook the biryani in the earthen pot for at least 40 minutes on simmer.
