Garlic curry, which is quite easy to prepare is loaded with flavours. It can be saved up to three days without refrigeration. This spicy curry goes amazing with rice and chapathi as well. Check out the simple recipe of garlic curry.
Ingredients
1 cup garlic cloves
15 shallots
3 bunches curry leaves
½ tsp turmeric powder
½ tsp black pepper powder
1 tbsp chilli powder
Small ball of tamarind
Salt as required
3 tbsp oil
1 tomato
¼ tsp asafoetida
Preparation
Fry half of the garlic cloves along with curry leaves. Allow the fried garlic to cool down before grinding it into paste.
Sauté the rest of the garlic and shallots in the same pan, until they turn soft and golden in colour.
Into it add turmeric powder, chilli powder, and salt as required.
Sauté until the raw smell is gone.
Now add the diced tomato and sauté.
Pour in the tamarind water and allow it to boil.
Add the previously prepared fried garlic paste and mix well.
Finally, add the black pepper powder and asafoetida powder.
Mix everything well together.
Store the garlic curry in air tight containers.
