Mothers often try to make the kids' lunch boxes healthy and attractive as well. They are eager to pack different dishes that would make their little ones happy. Here is an easy recipe of egg fried rice which is delicious and nutritious.

Ingredients
1 small carrot (chopped)
Half of an onion (chopped)
Half of a capsicum (chopped)
8 beans (chopped)
3 eggs
Chilli powder as required
Soy sauce
Basmati rice
Salt as required

Preparation
Heat oil in a pan and add the eggs
Scramble the eggs on low flame and add salt and pepper
Turn up the flame before adding the onions, carrots, capsicum and beans
Cook the vegetables
Add the boiled rice and mix well
Add soy sauce as per taste.

Notes
Vegetables need not be cooked soft for fried rice.
