Crunchy and spicy dragon potato

Amazingly easy to make, this dish is spicy, crispy and loaded with flavour. Dragon potato goes well with white rice, chapathi and roti.
Ingredients
1/2 kg potato (cubed)
1 cup corn flour
2 tsp Kashmiri chilli powder
1 egg
A pinch of red food colour
1/2 tsp black pepper powder
Salt as required
2 onions (chopped)
3 green chillies (finely chopped)
1 capsicum (cubed)
1 tbsp celery (chopped)
1 tbsp spring onion (chopped)
1 tbsp ghee
Coconut oil
Preparation
Add the cubed potatoes in hot water mixed with salt for a minute
Drain the potato
Prepare a thick batter by mixing corn flour, Kashmiri chilli powder, egg, red food colour, pepper powder and salt as required
Marinate the potatoes in this batter for half an hour
Heat oil in a pan
Add the marinated potatoes and fry until crisp
In another pan heat the ghee
Add onions and green chillies
Sauté well
Add capsicum and a pinch of salt
Sauté well
Add the fried potatoes, chopped celery and spring onion
Stir well for a minute before turning off the flame.
