Here is a unique recipe of green sambar which is delicious and nutritious. This sambar goes well with rice and breakfast dishes like idli or dosa.
Ingredients
1 tsp coconut oil
1/4 cup fenugreek leaves
4 -6 green chillies (split in two)
1 onion (sliced)
2 potatoes (diced)
1 tomato (diced)
1 cup toor dal
1 tsp turmeric powder
Salt as required
For the tempering
2 tsp coconut oil
1 tbsp mustard seeds
2 dried chilies (split in half)
1 sprig of curry leaves
2 pinches asafoetida
2 tbsp lemon juice
To garnish
2 tsp coriander leaves (chopped)
Preparation
Heat oil in a pan
Add the fenugreek leaves and green chilies
Sauté well and keep it aside
In a pressure cooker add onions, potatoes, tomatoes, toor dal, turmeric powder and salt as required
Pour some water and cook
Add the sautéed fenugreek leaves into it
Stir well and allow it to boil
Heat some coconut oil in a pan
Add the mustard seeds
When the mustard seeds pop, add dried chilies, curry leaves and asafoetida
Roast well and pour this tempering over the pressure-cooked vegetables
Garnish with lemon juice and chopped coriander leaves.
