Healthy and tasty jackfruit seed masala curry

Jackfruit which is the official fruit of Kerala is a store house of vitamins, proteins, and nutrients. The jackfruit seeds, which are rich sources of fibre, can be used to make stir fries or tasty curries as well. Here is a recipe of jackfruit seed masala curry which tastes amazing with chapathi, roti, or rice.
Ingredients
1 cup jackfruit seeds (peeled and chopped)
1 medium sized onion (sliced)
1 tsp ginger (crushed)
1 tsp garlic (crushed)
2 green chillies (halved)
2 tbsp coconut slices
1 1/2 tsp chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp garam masala
1/2 cup grated coconut
2 tbsp coconut oil
3 shallots (sliced)
2 sprigs curry leaves
2 dried chillies (slit)
Water as required
Salt as required
1 tsp chicken masala
Preparation
Wash the jackfruit seeds and drain
Marinate these with chilli powder, turmeric powder, and salt as required
Cook the marinated jackfruit seeds and keep it aside
Heat oil in a pan
Add the coconut slices
When the coconut slices changes colour to golden brown, add coriander powder, chilli powder, garam masala and chicken masala
Mix well
Let the mixture cool down before grinding it into a fine paste
In another pan, heat some coconut oil
Add onion and sauté
Add ginger and garlic, and roast well
Add the cooked jackfruit seeds and mix well
Add the coconut - masala paste
Stir well until thick
Add more salt if required and turn off the heat
Prepare the tempering by popping some mustard seeds and sautéing green chillies, dried chillies, shallots and curry leaves
Pour the tempering over the curry
Cover the curry with a lid and keep aside for five minutes
Garnish with chopped coriander leaves if required.
