Pavakka aka bitter gourd is of course bitter but can be fried well to remove its bitterness. It's incredibly healthy as well. Here's a simple dish prepared with bitter gourd and curd. Pavakka Kichadi goes well with rice as well as roti.

Ingredients
3 bitter gourds cut into rounds
10 green chillies, sliced
½ coconut grated
1 spoon mustard seeds, crushed
½ litre curd
½ tsp mustard seeds
2 red chillies
½ tsp fenugreek
Salt as needed
Coconut oil as needed

Preparation
Heat oil in a pan
Fry the sliced pavakka (bitter gourd) in it
Once it is fried, take the bitter gourds out of the pan and grind it
In the same oil, add green chillies and fry it for 1-2 minutes
Mix the ground bitter gourd and fried green chillies
Grind the coconut into a smooth paste
Add crushed mustard seeds, salt, and curd to this
Mix it well
Add the prepared bitter gourd mixture and mix it
Heat oil in a pan
Splutter mustard seeds in it
Add red chillies and fenugreek
Pour the bitter gourd mix and boil it well
Serve it with rice or roti
