A fun, delicious cake is something every kid looks forward to. Whip up a healthy alternative to a maida or all-purpose flour cake. The whole wheat carrot cake is the right choice for your kids as it is a sugary treat, but it's much healthier. This moist cake is a keeper and the kids will rave about it.

Ingredients
1 1/2 cups whole wheat flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon powder
1 1/2 cups grated carrot
3/4 cup brown sugar or powdered jaggery
3/4 cup flavourless oil
3 eggs
2 tbsp honey or pure maple syrup
1 tsp pure vanilla extract

Preparation
Sieve the dry ingredients- whole wheat flour, baking powder, baking soda, salt and cinnamon powder
If you get lumps, use a spoon and make sure that it's all sieved in
The whole wheat mixture is ready.
In a cake mixer, add flavourless oil, eggs, brown sugar, honey and pure vanilla extract.
Mix it well
Once the ingredients are mixed, spoon in the whole wheat mixture
Add grated carrots
Blend it well
Once it's properly blended, put the mix in a tray or a cake tin greased with butter and dusted with flour
Pour the batter on the centre of the tray
Give a gentle tap to let the air bubbles out
Bake the cake in a preheated oven at 175 °C for 20-25 minutes
Check the cake for doneness using a tooth pick
The cake is ready
