A simple stir fry with ample spices and coconut that makes for one fulfilling dish.
Ingredients
3 tbsp oil
½ tsp cumin
½ tsp mustard seeds
1 large onion, thinly chopped
¾ inch + 1 tsp chopped ginger
3 pods crushed garlic
¾ tsp chilli powder
1 tsp crushed ginger
1 tsp turmeric powder
Sufficient quantity salt
200 ml water
400 g tender beans, edged and fiber removed, cut into two
2 finely chopped tomatoes
¼ cup of coconut, sliced into thick pieces
Preparation
Heat the oil in a pan. Splutter cumin and mustard seeds
Add onion, ginger and garlic and sauté
When the large onion changes color, remove from stove, add chilli powder, ginger, turmeric powder and salt and mix well
Place back on stove, add water and beans, mix and cook in low flame for 10 minutes
When the beans are cooked, add tomatoes and cook for 10-15 minutes and stir fry
Add coconut pieces and serve
